We are trying to pretend like it is soup weather here in Florida.
Yes, it was 80 degrees and very humid today.

I made this fabulous soup I found that is originally adapted from
Olive Garden's Pasta E Fagioli Soup
It is delicious.
Adapted from this original recipe
Ingredients:
1 lb ground beef
1 small onion, chopped
1-2 carrots, shredded
1/2 c. celery, chopped
1 (14 oz) can diced tomatoes, undrained
1 (16 oz.) can white kidney beans, drained
16 oz. beef broth
1 tsp. oregano
1 tsp. pepper
2 tsp. parsley
10 oz. traditional spaghetti sauce
5 oz. ditali pasta
parmesan
parmesan
Directions:
Brown ground beef in a pan.
Add all the ingredients except the pasta into the crock pot, add browned ground beef.
Let cook on low for 5-6 hours
Boil Pasta and add it to soup for the last 30 minutes.
Top with parmesan when served.

{This makes 6-8 servings}
Make this delicious soup and
go cuddle by the fire with hot cocoa.

I'm really wishing I had some of that right now. I'm freezing in this car waiting for my bf to finish up some paperwork! I was just thinking last night that I wish I could have a bowl of soup, and it wasn't cold here yesterday either. I am gonna have to take this down for later :)
